Lebanese Fattoush Salad with Beetroot Pita Chips – The Great Fridge Clearer
We LOVE Fattoush. It is a classic salad – fresh lettuce, vegetable, dressing – but made with some Lebanese love.
The word Fattoush derives from Fatteh with literally means crumbs. And being from Lebanon, those crumbs are from Pita bread chips. And the dressing? Picante sumac with sumptuous traditionally produced olive oil and lemon juice.
Why is Fattoush a great fridge cleaner? It can handle any of your classic salad ingredients. Add lettuce, radish, tomato, cucumber, capsicum, avocado, spring onion, and herbs of all sorts – even feta! So have a play with your favourite ingredients. This recipe uses Alamir Bakery Beetroot pita chips for vibrant colour, it’s very insta friendly.
Eat your Fattoush with grilled meats or falafel, pita bread, hummus, or add some chips – et voila!
TIP: Being a lemon salad dressing, it’s best to add this right before serving so the salad and pita chips stay crisp.
Mix all dressing ingredients together and let sit.
Add all salad ingredients into a large serving bowl.
